Banana Pancakes
A fun healthy spin on pancakes sure to please both kids and adults alike.

Ingredients
- 2 cup Whole wheat flour
- 2 tsp Baking powder
- 1 tsp Cinnamon
- 1/2 tsp Salt, (feel free to use less)
- 6 Bananas, divided
- 2 Eggs, beaten
- 2 cup Nonfat milk
- 3 tbsp Vegetable oil
- Nonstick cooking spray
Directions
- In a bowl, combine flour, baking powder, cinnamon, and salt.
- In a bowl, mash 2 bananas (about 1 cup). Add eggs, milk, and vegetable oil, then mix. Add wet mixture to dry flour mixture and stir until just combined.
- Spray a skillet or griddle with nonstick cooking spray and heat over medium heat. When heated, drop batter onto the skillet using a large spoon or a 1⁄4 cup measuring cup.
- Cook until bubbles rise up evenly throughout the pancake. Flip the pancakes using a spatula.
- Cook 2 to 3 minutes on the other side until cooked through. Continue making pancakes until all batter is gone.
- While pancakes are cooking, slice the 4 remaining bananas.
- Serve pancakes immediately, topped with sliced bananas instead of syrup.
