Beef and Okra Stew
"Bamia" is okra, which is prepared as a stew in many parts of Africa and the Middle East. This Ethiopian version includes beef and plenty of aromatic spices.

Ingredients
- 2 tbsp Vegetable oil
- 1 Onion, large, chopped
- 1 lb Beef top sirloin, cut into 1-inch cubes
- 6 clove Garlic, minced
- 1 1/2 tbsp Coriander seed, ground
- 2 tsp Cumin, ground
- 1 tsp White pepper, ground
- 2 cup Water
- 2 Tomatoes, large, blended
- 1 tbsp Tomato paste
- 1 Green chili peppers, seeded and minced
- 1 tbsp Ginger, fresh, crushed or minced (1-inch piece)
- 1 tsp Salt
- 2 cup Okra, fresh, cut into 1-inch pieces (or one 10-oz. package frozen okra, thawed)
Directions
- Heat oil in a large pot over high heat. Add onion and cook until soft.
- Add beef, garlic, coriander, cumin, and white pepper. Stir and cook until meat is brown, about 5 minutes.
- Add water, tomatoes, tomato paste, chile, ginger, and salt. Stir and bring to a boil. Reduce heat to low. Cover partly and simmer until meat is tender, 30 to 40 minutes.
- Stir in okra. Simmer 10 minutes.
